Does anyone have a recipe for real good Chinese style fried rice?And how you cook it?

I personally like to heat and spread peanut oil a pat of butter in the pan. Soak about a cup of minute rice (or regular rice but you will have to soak longer) for a few minutes. Dump rice in the pan let it cook stirring frequently until brown. Beat one egg and slowly stir into the rice until fried. Add soy sauce, garlic, salt to taste.

Prince,when you soak the rice,how long does it take?Also do you use a wok?I assume you drain the water off the rice?

If using minute rice soaking about 5 minutes (or until soft) will do. If using "fresh" long grain rice approximately 2 hours of soaking. Drain the water in either case. Yes I prefer a Wok preferably copper lined bottom for more even heating. You can experiment with other oils and spices to give it your own taste. I sometimes use sesame oil, Hot Chili or others to give different flavors. I sometimes dash in a bit of Turmeric and fresh Ginger for a more Taiwanese flair. See not only am I the Technical Guru I am also a pampered chef! Well not really I am not good at following recipes so I end up "adventure" cooking and experimenting with things.
